- Olive oil3 tbsp
- Garlic6 ½ tsp
- Parsley · dried1 tsp
- Chili flake · crushed1 tsp
- White Pizza Sauce2 cups
- Pizza dough2
- Mozzarella cheese · shredded12 oz
- Butter½ sticks
- Flour¼ cups
- Heavy cream2 cups
- Parmesan cheese · grated1 cup
- Salt1 tsp + 2 cups
- White pepper · ground½ tsp
- Sugar1 tsp
Instructions
- Prepare a grill for indirect cooking at 450-500 degrees.
- Thread the shrimp onto soaked wooden skewers. Split the lobster tails down the top with kitchen shears and gently loosen the meat from the shell.
- Drizzle the shrimp and lobster with olive oil. Mix the garlic salt, parsley and red pepper, and season with several pinches.
- Grill the shrimp and lobster until no longer translucent: about 4 to 5 minutes for the shrimp and about 8 minutes for the lobster.
- Remove the shrimp from the skewers and the lobster meat from the shells. Chop into bite-size pieces and toss together.
- Shape the pizza dough thinly on a lightly floured surface, and transfer it to butcher paper. Spread the white sauce over it, top with mozzarella and the seafood, season with a pinch of the garlic salt blend and a drizzle of olive oil.
- Cook the pizza on a ceramic stone until the crust is brown and the cheese is hot and bubbly.
- White sauce: melt the butter over medium heat, add the flour and whisk for 2 to 3 minutes. Slowly whisk in the heated cream and bring to a simmer. Add the Parmesan, salt, white pepper and granulated garlic.
