The Best Homemade Amish Donuts (Soft, Fluffy & Chewy)
Ingredients
- Milk1 cup + 2 tbsp
- Yeast1 packet
- Sugar2 cups
- Salt1 tsp
- Egg1
- Butter · melted½ cups
- Bread flour2–10 ½ cups
- Flour2–2 ½ cups
- Oil for frying
- Heavy cream2 tbsp
- Vanilla2 tsp
- Corn syrup2 tsp
- Cocoa powder¼ cups
Instructions
- In a large bowl, whisk together the warm milk, warm water, yeast and 1 tablespoon sugar. Cover and let stand 5-10 minutes, until frothy and bubbly.
- Whisk in the remaining sugar, salt, egg and melted butter. Gradually stir in the flours, alternating bread and cake flour, until you have a soft dough; err on the side of slightly too moist.
- Knead the dough on a floured surface for 5 minutes. Place it in a greased bowl, cover and let rise in a warm place for 1 hour, until doubled.
- Punch down the dough and roll it to about ½ inch thick. Cut out donuts with a floured cutter and place on a parchment-lined baking sheet. Cover lightly and let rise 30-45 minutes, until puffed.
- Heat about 2 inches of oil in a Dutch oven or deep fryer to 350°F. Fry each donut 1-2 minutes per side, until light golden brown. Remove and cool slightly on a wire rack.
- Mix your chosen glaze or icing until smooth.
- While the donuts are still warm, dip the tops in the glaze or topping. Serve warm or at room temperature.
