THE BEST HUMMUS Recipe You Will Ever Try! 💯 Perfect Consistency & Silky Smooth | SO EASY TO MAKE
Ingredients
- Canned chickpea400
- Tahini6 tbsp
- Lemon1
- Garlic2
- Extra virgin olive oil2 tbsp + 2–3 tbsp
- Salt
- Sumac · ground
- Cumin · ground
- Parsley
Instructions
- Peel the chickpeas: rub the canned chickpeas in a large bowl to remove their skins, then fill the bowl with water. The skins will float; drain them off and collect the peeled chickpeas.
- Put the peeled chickpeas, 2 garlic cloves, ½ teaspoon of salt, 6 tablespoons of tahini and 2 tablespoons of extra virgin olive oil into a food processor.
- Squeeze in the juice of one lemon and process on low-medium speed for 7 to 8 minutes.
- Add the 6 ice cubes gradually while processing, to keep the hummus from getting warm and to help it turn smooth.
- After a couple of minutes, if it is not smooth enough, keep processing until creamy. You can switch to high speed at this stage.
- Taste and adjust the lemon, tahini and salt. Ideally let it rest 2 to 3 hours before serving so the garlic and olive oil settle.
- Spread the hummus on a serving plate and make a small well in the centre with the back of a spoon.
- Sprinkle with ground sumac, ground cumin and parsley leaves, then pour 2 to 3 tablespoons of extra virgin olive oil over the top.
