The Best King Crab Rolls with Garlic Butter & Brioche Buns
Ingredients
- King crab2 lb
- Bread6–7
- Lemon1
- Butter½ cups
- Salt½ tsp
- Black pepper · ground½ tsp
- Smoked paprika½ tsp
- Garlic powder1 tsp
- Chive3 tbsp
- Dill2 tbsp
- Parsley3 tbsp
Instructions
- Make the garlic butter: melt the butter in a small saucepan over medium heat (or in the microwave). Take it off the heat and stir in the smoked paprika, garlic powder, salt and black pepper.
- If the crab is pre-cooked and chilled, remove the shell with kitchen shears and a small fork, then break the meat into bite-sized pieces in a large bowl.
- Heat a frying pan over medium heat with a couple of tablespoons of the garlic butter.
- Add the crab and toss gently in the butter for a few minutes, just until hot and steaming. Do not overcook, or it becomes rubbery.
- Season the crab with the chives, dill and parsley and add the juice of half a lemon.
- Meanwhile, place the brioche buns on a baking sheet and broil for about 3 minutes, until warm.
- Stir the remaining herbs into the rest of the garlic butter.
- Fill each warm bun with crab, top with garlic butter and squeeze over a little lemon juice. Serve right away.
