Ingredients

Instructions

  1. Heat the oven to 350°F (175°C). Grease a 9x13-inch baking dish lightly, then line it fully with parchment paper.
  2. Whisk 3 cups (360 g) of the flour with the powdered sugar and salt. Pour in the melted butter and mix until well combined. A dash of vanilla can be added with the butter if you like.
  3. Press the dough firmly into an even layer in the lined pan, without cracks. Bake at 350°F (175°C) for 20 to 25 minutes, until light golden.
  4. While the crust bakes, put the sugar and lemon zest in a food processor and pulse until the zest is fully incorporated and the sugar is light yellow. Without a processor, finely mince the zest and mix it with the sugar.
  5. Mix the zested sugar with the remaining ½ cup of flour in a large bowl. Sifting is optional; discard any zesty sugar bits that will not pass through a sifter.
  6. Add the lemon juice and eggs to the sugar mixture and whisk very well until completely combined.
  7. Pour the filling over the warm crust and bake for about 25 minutes, turning the pan halfway through. Remove from the oven and cool for 1 hour, then refrigerate for 2 hours.
  8. Remove the bars from the pan, dust with powdered sugar and cut with a clean, sharp, damp knife. Clean and re-wet the knife after each cut.
