- Fish sauce2 tbsp
- Honey1 tbsp

Instructions
- Combine the flavored butter ingredients in a pan, bring to a boil over medium heat, then simmer 10 to 15 minutes. Remove from heat and set aside.
- Steam the lobster over boiling water for 9 minutes for a 2 lb lobster, adding 1 minute per extra half pound. It should be only about three-quarters cooked. Move it to ice water to stop the cooking.
- Cut the lobster in halves, place on a baking sheet, and brush with 4 tablespoons of the flavored butter. Broil on high (500°F) on the medium rack for 2 to 3 minutes, until fully cooked. Keep warm.
- Heat a wok over high heat and add the remaining flavored butter. Add the noodles and oyster sauce and stir-fry 2 to 4 minutes until fully cooked and soft. If they need more time, add a splash of water and let them steam.
- Add the green onions and stir-fry for 1 minute, then remove from heat.
- Plate the noodles. Pour the juices from the baking sheet over them, then top with the lobster. Squeeze over fresh lime or lemon juice and garnish with chopped cilantro and fried shallot.
