The BEST Mac & Cheese of Your Life | One-Pan Manchego Mac and Cheese
Ingredients
- Extra virgin olive oil2 tbsp
- Garlic3 cloves
- Breadcrumb½ cups
- Paprika · smoked½ tsp
- Thyme · dried¼ tsp
- Milk2 cups
- Vegetable broth1 cup
- Saffron¼ tsp
- Macaroni pasta8 oz
- Manchego cheese · shredded2 cups
- Dijon mustard½ tbsp
- Salt
- Black pepper
- Parsley · chopped
Instructions
- Heat a large frying pan over medium heat and add the olive oil.
- After a couple of minutes, add the garlic and stir constantly. After 30 to 45 seconds, add the panko and keep stirring until golden, about 3 to 4 minutes.
- Turn off the heat. Stir in the paprika, thyme and a small pinch each of sea salt and black pepper, then move the crumbs to a bowl and set aside.
- In the same pan, add the milk, vegetable broth, saffron and a pinch of sea salt. Heat on high and stir gently.
- When it reaches a light boil, add the macaroni and lower to medium heat. Stir every 2 minutes so the pasta does not stick and cooks evenly.
- When the pasta is al dente (follow the package timing), turn off the heat. Stir in the Manchego and Dijon mustard, season with a small pinch each of sea salt and black pepper, and stir until the cheese is fully melted.
- Top with the reserved breadcrumbs spread evenly, sprinkle with chopped parsley, and serve immediately.
