Ingredients

Instructions

  1. In a large bowl, combine the flour, yeast and sugar. Stir in the salt, then add the warm water and oil. Mix into a soft dough and knead for 7 to 8 minutes until smooth and elastic.
  2. Put the dough in a lightly greased bowl, cover, and let it rise for 1 hour or until doubled.
  3. Heat the olive oil in a skillet over medium heat and sauté the onion for 4 to 5 minutes. Stir in the garlic and cook for another minute.
  4. Add the ground beef and break it up with a wooden spoon until browned and no longer pink, about 5 minutes.
  5. Stir in the salt, pepper, thyme, cumin, paprika and tomato paste, mix well and cook for about 2 minutes.
  6. Pour in the broth or water and simmer on low heat for a few minutes until juicy but not dry. Take off the heat, let cool, then stir in the pine nuts if using.
  7. Punch down the dough and divide it into 18 equal pieces of about 45 to 50 grams each. Roll each into a ball, then flatten into a 7 to 9 cm (3 to 3.5 inch) circle.
  8. Spoon 2 tablespoons of filling into the centre of each circle, gather the edges, pinch tightly to seal, and reshape into a smooth ball.
  9. Place the buns seam-side down on a parchment-lined tray, cover, and rest for 20 minutes while preheating the oven to 350°F (180°C).
  10. Brush each bun with beaten egg, sprinkle with sesame seeds, and bake for 18 to 22 minutes, until golden brown.
