The Best Mediterranean Grilled Fish
Ingredients
- Sea bass4
- Olive oil6 tbsp
- Shallot3
- Garlic8
- Parsley2 ¼ cups
- Dill1 cup
- Salt1 tsp
- Aleppo pepper1 tsp
- Lemon4
- Tomato2
- Jalapeño chili1
- Cilantro1 cup
- Red onion½
- Black pepper¼ tsp
- Sumac1 tsp
Instructions
- Make three shallow slits in each branzino with a sharp knife, without cutting all the way through.
- In a bowl, mix the olive oil, shallots, garlic, parsley, dill, Aleppo pepper, salt and lemon juice. Spoon half of it into the fish cavities, add the lemon slices and close with a couple of toothpicks. Place the fish on a baking sheet and spoon the rest of the herb mixture over the top.
- Heat the grill to high, using charcoal or gas. Rub the grates with half a potato to stop the fish sticking.
- Grill the fish for about 8 minutes per side, turning only once, until the skin is brown and crisp and the fish is fully cooked.
- For the relish, mix the chopped tomatoes, jalapeño, cilantro, parsley, red onion, lemon juice, olive oil, salt, black pepper and sumac in a bowl.
- Place the grilled fish on a platter, top with the relish and serve immediately.
