Preparación

  1. Mix the chicken with 1 teaspoon of soy sauce and set aside.
  2. Drain the soaked glass noodles and snip them once or twice with scissors.
  3. Stir the sauce ingredients in a small bowl until the sugar dissolves.
  4. Heat oil in a wok or large pan over medium-high heat. Add the garlic and onion and cook until the garlic turns golden.
  5. Add the chicken and cook until the pieces separate and the outside is partly cooked.
  6. Push everything to one side and add a little oil to the empty side. Add the eggs, break the yolks, let them set halfway, then scramble and mix with the chicken.
  7. Add the cabbage, carrots and about half a tablespoon of the sauce, and toss quickly.
  8. Add the noodles, pour over the rest of the sauce and the white pepper, and toss for about 2 minutes until the noodles have absorbed the sauce and are cooked. If they are too chewy, add a splash of water and cook 1 minute more.
  9. Turn off the heat, add the tomato and green onion, and toss so the residual heat warms them through. Serve, with jasmine rice if you like.
