Ingredients

Instructions

  1. Bring a pot of water to a boil, add the oil and okra, and blanch for 1.5 minutes.
  2. Remove the okra and rinse under running water until cool enough to handle.
  3. Trim off the calyx (the cap where the stem joins). Cut the okra into 1/4-inch (about 0.6 cm) slices.
  4. Put the okra in a bowl. Crack in the 3 eggs, add 1 tbsp soy sauce, 1 tbsp oyster sauce, 1/4 tsp ground white pepper and 1/2 tbsp garlic chili sauce, then mix well.
  5. Heat a wok over high heat until smoking hot. Add 2.5 tbsp oil and swirl it to coat the bottom.
  6. Add the okra and egg mixture and wait 10 seconds. Gently swirl the wok so the egg does not stick.
  7. Once the egg is set, flip it and fry the other side. Keep stirring and break the egg into smaller pieces, cooking until brown and crispy or to your preferred doneness.
