The Best Orange Cake Recipe
Ingredients
- Orange2
- Sugar¾ cups
- Flour2 ¼
- Baking powder2 tsp
- Salt¼ tsp
- Ginger powder · grated2 tsp
- Cinnamon½ tsp
- Clove
- Tablespoons¾ cups + 2 + ½ cups + 1
- Egg3
- Vegetable oil¾ cups
- Vanilla1 tsp
Instructions
- Preheat the oven to 350°F (175°C). Line the base of a 9-inch (23 cm) springform pan with parchment paper.
- Slice the oranges 1/8 inch (3 mm) thick. In a saucepan, dissolve the 3/4 cup (150 g) sugar in the 3/4 cup (180 ml) water over heat, bring to a boil, then add the slices, lower the heat and simmer 10-15 minutes.
- Turn off the heat and leave the slices to soak in the syrup while you make the cake.
- In a large bowl, mix the flour, baking powder, salt, ginger, cinnamon and any other spices.
- In another bowl, whisk the eggs and the 3/4 cup + 2 tablespoons (175 g) sugar for about 5 minutes until light and fluffy.
- While beating on low speed, slowly add the 3/4 cup (180 ml) vegetable oil in a steady stream until combined.
- Add the orange zest from 2 oranges, the 1/2 cup + 1 tablespoon (135 ml) orange juice and the vanilla extract, and mix until combined.
- Remove the orange slices from the syrup and cut each in half. Arrange them on the bottom of the pan.
- Gradually add the dry ingredients to the wet ingredients and mix just until incorporated.
- Pour the batter over the oranges and bake for about 40 minutes, until a toothpick inserted in the centre comes out clean.
- Cool, then release the cake from the pan and invert it onto a serving dish. Brush some of the syrup over the oranges.
