Preparación

  1. Preheat the oven to 350°F (175°C). Line the base of a 9-inch (23 cm) springform pan with parchment paper.
  2. Slice the oranges 1/8 inch (3 mm) thick. In a saucepan, dissolve the 3/4 cup (150 g) sugar in the 3/4 cup (180 ml) water over heat, bring to a boil, then add the slices, lower the heat and simmer 10-15 minutes.
  3. Turn off the heat and leave the slices to soak in the syrup while you make the cake.
  4. In a large bowl, mix the flour, baking powder, salt, ginger, cinnamon and any other spices.
  5. In another bowl, whisk the eggs and the 3/4 cup + 2 tablespoons (175 g) sugar for about 5 minutes until light and fluffy.
  6. While beating on low speed, slowly add the 3/4 cup (180 ml) vegetable oil in a steady stream until combined.
  7. Add the orange zest from 2 oranges, the 1/2 cup + 1 tablespoon (135 ml) orange juice and the vanilla extract, and mix until combined.
  8. Remove the orange slices from the syrup and cut each in half. Arrange them on the bottom of the pan.
  9. Gradually add the dry ingredients to the wet ingredients and mix just until incorporated.
  10. Pour the batter over the oranges and bake for about 40 minutes, until a toothpick inserted in the centre comes out clean.
  11. Cool, then release the cake from the pan and invert it onto a serving dish. Brush some of the syrup over the oranges.
