Ingredients

Instructions

  1. In a food processor, combine 1 1/2 cups (180g) of the flour, the sugar and the salt. Pulse a few times to mix.
  2. Add half of the butter and process until very crumbly and just starting to ball up, about 30 seconds. Scatter in the remaining butter and the remaining 1 1/2 cups of flour, then pulse twice to distribute.
  3. Drizzle 4 tablespoons (60ml) of ice water over the mixture and pulse a few times. Add more water one tablespoon at a time as needed, pulsing once or twice after each addition, until the dough holds together when squeezed but is neither wet nor dry.
  4. Turn the dough onto the counter and shape into a ball. Cut the ball in half and press each half into a disc.
  5. Wrap the discs tightly in plastic wrap and refrigerate for at least 1 hour or up to 3 days. They can also be frozen for a few months and thawed in the fridge overnight before using.
