Instructions
- Toss the shrimp with 1 tsp soy sauce and 1/8 tsp white pepper in a medium bowl and let it marinate while you prep the rest.
- In a small bowl, mix the remaining white pepper, 2 tbsp soy sauce, fish sauce, oyster sauce, palm sugar and curry powder. Set aside.
- Cut the pineapple in half lengthwise, keeping the stem on. Cut slits around the edges and score the flesh without cutting through the skin. Scoop out the chunks with a spoon, then reserve 1 cup (6 oz) of pineapple and cut it into smaller chunks.
- Heat a large skillet or wok over high heat and add 1 tbsp oil. Pour in the beaten eggs and scramble lightly, leaving them fairly large and silky. Remove the egg and set aside.
- Heat the empty wok over high heat, add 1 tbsp oil and the marinated shrimp. Cook for 2 to 3 minutes until about three-quarters cooked, adjusting for shrimp size. Remove and set aside.
- Heat the empty wok over high heat and add 3 tbsp oil, garlic, ginger and Thai chili. Stir-fry for 30 to 45 seconds until fragrant. Add the diced carrot, green beans and cashews and stir-fry for 30 seconds to 1 minute.
- Add the rice and sauce mixture and stir-fry for 1 to 2 minutes until every grain is coated with sauce.
- Add the reserved pineapple chunks and mix. Then add the shrimp, egg and green onions. Break up the egg into the rice and keep stir-frying for 1 to 2 minutes until the shrimp is fully cooked and everything is hot.
- Spoon the fried rice into the hollowed pineapple and serve.
