Instructions
- Cut the pork riblets into single pieces, bones included. Optionally blanch them in boiling water for 2 minutes, then rinse under cold water.
- Put the garlic, ginger, peppercorns, bay leaves and licorice into a large tea filter bag.
- Place the ribs, spice bag, rock sugar, leek, shiitake, water, chicken broth, Shaoxing wine and soy sauce in a 9-quart (8.5 L) pot. Cover, bring to a boil over high heat, and skim the scum for about 5 to 10 minutes.
- Once the soup is clear, cover, reduce to medium-low and simmer for 1 1/2 hours.
- When the soup has finished simmering, remove all the solids except the ribs, squeezing as much liquid as possible from the vegetables and the bag.
- Bring a second pot of salted water to a boil. Quarter the baby bok choy and blanch it for 1 minute, or until tender to your liking, then lift it out.
- In the same pot, cook the noodles following the package directions.
- Drain the noodles into a large serving bowl and arrange the bok choy around them. Pour the soup and ribs over the noodles until they are covered.
- Top with chopped green onions and cilantro, add 1 to 3 teaspoons of chili oil with chili flakes to taste, and serve immediately.
