The Best Potato Latkes (Potato Fritters Recipe)
Ingredients
- Potato2.2 lb
- Onion1
- Egg2
- Flour2 tbsp
- Salt
- Black pepper½ tsp
- Oil
Instructions
- Fill a large bowl with cold water. Peel the potatoes and onion and grate them straight into the water to limit browning.
- Drain well, then wrap the grated mixture in a clean towel or cheesecloth and twist tightly to squeeze out as much liquid as possible.
- Transfer the mixture to a large bowl and stir in the beaten eggs, flour (or breadcrumbs), salt and black pepper until evenly combined.
- Heat a generous layer of oil in a large skillet over medium-high heat. Spoon in 2 to 3 tablespoons of mixture per fritter, flatten slightly, and cook 3 to 4 minutes per side, until golden and crisp.
- Drain on paper towels and sprinkle lightly with salt. Serve hot.
