The BEST Salt and Pepper Chicken Wings
Ingredients
- Chicken wing2 lb
- Shaoxing wine1
- Ginger · grated1 tbsp
- Garlic · grated1 tbsp + 3 cloves
- Salt and black pepper plus more for later½ tsp
- Potato starch1 cup
- Frying oil
- Onion¼
- Chili pepper1
- Scallion2
- Butter½ tbsp
- Chicken stock · powder0.13 tsp
Instructions
- Combine the wings, shaoxing wine, grated ginger, grated garlic, 1/2 tsp salt and black pepper in a large bowl. Cover and marinate in the fridge for 20 minutes to overnight.
- Heat a large pot of oil to 350°F (180°C). Coat the marinated wings evenly in the starch and shake off the excess.
- Fry the wings in 2 or 3 batches so the pot is not crowded, since crowding drops the oil temperature and makes them less crispy. Fry for 12-15 minutes, depending on size, then move to a cooling rack. Repeat with the remaining wings.
- While the wings fry, slice the onion, garlic, chilies and green onions.
- Heat a large skillet or wok over high heat and add the butter. Once melted and foamy, add the garlic, onion, chilies and green onions and stir-fry for 30-45 seconds.
- Add the chicken powder (if using) and 1/2 tsp each of salt and pepper, stir, then add the wings and toss for 1-2 minutes until well combined.
- Serve immediately on a plate, sprinkling extra salt and pepper to taste.
