- Dill · finely chopped dried2 bunches
- Scallion · thinly sliced6
- Ricotta cheese15 oz
- Feta cheese1 lb
- Egg · beaten4
- Butter · melted½ lb
- Salt½ tsp
- Black pepper · ground½ tsp
Instructions
- Preheat the oven to 350°F (180°C). Line two half-sheet pans with parchment paper.
- In a mixer with the paddle, beat the feta, ricotta, eggs, salt, pepper and dill until combined.
- Add the scallions and beat until combined.
- With the mixer on low, add the chopped spinach a handful at a time until all is mixed in. Finish mixing with a spatula and set aside.
- Cut the phyllo, still rolled in its packaging, into three equal portions. Unwrap one and keep the others covered so they don't dry out.
- Work with two sheets of phyllo at a time, brushing melted butter between the layers and on top.
- Place a tablespoon of filling at the bottom of the strip and fold it up into a triangle, flag-style.
- Arrange the triangles on the trays and continue until the filling or phyllo runs out.
- Brush the tops with melted butter, sprinkle with salt, and bake about 40 minutes until golden.
