The Best Spring Rolls Of Your Life! Crispy Spring Rolls With Beef // Chef's Kiss recipe!
Ingredients
- Oil2 tbsp
- Ground beef1 lb
- Soy sauce2 tbsp
- Garlic4
- Ginger2 inches
- White pepper powder¼ tsp
- Shiitake mushroom1 cup
- Cabbage2 cups
- Carrot · shredded1 cup
- Scallion½ cups
- Sesame oil2 tbsp
- Spring roll wrapper20–25
- Flour2 tbsp
- Hot sauce
Instructions
- Heat 1 tablespoon of oil in a skillet or wok over high heat. Add the beef, 1 tablespoon of soy sauce, the grated garlic and ginger, and the white pepper. Cook for about 5 minutes, breaking up the beef as it cooks, then remove it from the pan.
- Add the remaining tablespoon of oil to the pan along with the mushrooms, carrots, cabbage, green onions and 1 tablespoon of soy sauce. Cook for about 5 minutes until softened. Return the beef to the pan, stir, and drizzle in the sesame oil.
- Spread the filling on a baking sheet and refrigerate until cool. Do not wrap spring rolls with hot filling.
- Mix the flour and water in a small bowl until it forms a thick, runny pancake-batter consistency.
- Place a wrapper diamond-shaped in front of you. Put about 2 tablespoons of filling about 2 inches above the bottom corner. Fold the bottom corner over the filling and roll tightly about halfway up. Fold in the left and right flaps to form an envelope, brush the top flap with the slurry, and roll to seal.
- Repeat with the remaining wrappers and filling.
- Heat about 1½ inches of oil in a pot over medium-high heat until it reaches 350–355°F, checked with a deep-fry or candy thermometer. Fry about five spring rolls at a time, without crowding, for 3 to 5 minutes until golden brown, turning occasionally.
- Drain the spring rolls on paper towels or a paper-towel-lined tray set on a rack. Let cool slightly and serve with sweet and sour or sweet chilli sauce.
