The Best Sweet Potato Mash EVER! | Chef Jean-Pierre
Ingredients
- Sweet potato · peeled2 lb
- Butter2 oz
- Bacon · chopped4 oz + ¾ lb
- Onion · diced1 cup
- Rosemary · chopped1 tbsp
- Sweet corn · frozen1 ½ cups
- Garlic · chopped1 tbsp
- Parsley · chopped2 tbsp
- Salt
- Black pepper
- Bacon bit¼ cups
- Parmesan cheese · grated¾ cups
Instructions
- Boil or steam the potatoes until tender. Process until very smooth, then add the butter, salt and pepper to taste and set aside.
- Heat 1 tablespoon olive oil in a sauté pan. Add the bacon and cook until it releases some fat. Add the onion and cook until golden brown. Add the rosemary and corn and cook for a couple of minutes. Add the garlic and parsley, mix well, and take off the heat so the garlic does not burn.
- Add the corn mixture to the potatoes, then add salt and pepper if needed. Stir in 2 to 3 tablespoons of Parmesan and spread in a gratin dish.
- Top with the remaining Parmesan and bacon bits, then bake for a few minutes until golden brown. Oven temperature is not given in the text.
- For the bacon bits, heat a pan with a little olive oil over medium heat. Cook the sliced bacon on very low heat until crisp, drain on paper towel and chop into bits.
