The Cake That Will Amaze You: Tahini and Date Cake
Ingredients
- Date · pitted300 g
- Lemon1 tbsp
- Butter¼ cups
- Brown sugar¼ cups
- Egg2
- Tahini · paste½ cups
- Flour1 ¼ cups
- Baking soda1 tsp
- Baking powder1 tsp
- Salt¼ tsp
- Vanilla1 tsp
- Walnut · chopped¼ cups
- Sesame seed1–2 tbsp
Instructions
- Preheat the oven to 325°F (160°C). Line the base of an 8-inch (20 cm) round pan with parchment and grease the base and sides.
- Put the dates, water and lemon juice in a small saucepan. Bring to a boil, stirring now and then, then lower the heat and simmer for 5 to 8 minutes, stirring occasionally, until the dates are soft. Take off the heat and set aside.
- Sift the flour, baking soda, baking powder and salt into a large bowl and set aside.
- In another large bowl, cream the sugar and butter. Add the eggs one at a time, mixing until each is incorporated. Add the tahini, date paste and vanilla, and beat on low speed until fully combined. Fold in the flour mixture in two batches.
- Pour the batter into the prepared pan and sprinkle with sesame seeds.
- Bake for 40 to 50 minutes, until a toothpick inserted in the centre comes out clean. After 30 minutes, cover loosely with foil to stop over-browning. Let cool in the pan for 5 to 10 minutes, then remove from the pan and let cool completely.
