Instructions
- In a mixing bowl, combine 2 Tbsp oil, 2 Tbsp lime juice and all the seasonings: chili powder, cumin, paprika, onion powder, garlic powder, salt and pepper. Stir well.
- Cut the chicken breasts in half lengthwise, add to the marinade and turn to coat evenly. Marinate up to 4 hours while you prep the vegetables.
- Slice the bell peppers and onions into thin 1/4-inch slices, cutting against the grain.
- Heat a large heavy skillet over medium heat and add 1 Tbsp oil. Sear the chicken in a single layer 3-5 minutes per side until browned and it reaches 165°F in the center on an instant-read thermometer. Cook in batches if needed. Transfer to a cutting board and rest.
- In the same skillet over medium heat, add 1 Tbsp oil, then the onion and peppers. Sauté 5-6 minutes, stirring often, until softened and browned in spots. Season with salt and pepper to taste.
- Meanwhile, slice the chicken into strips against the grain. Return the chicken to the pan once the vegetables are done, stir to combine and remove from heat.
- Serve over warmed tortillas with a squeeze of lime juice and your toppings.
