The Chocolate Chip Cookie of my dreams
Ingredients
- Butter225 g
- Flour2 cups
- Cornstarch3 tsp
- Baking powder¼ tsp
- Baking soda½ tsp
- Salt½ tsp
- Brown sugar1
- Sugar½ cups
- Egg2
- Vanilla1 tsp
- Dark chocolate chip1 ½ cups
- Chocolate chip¾ cups
Instructions
- Brown the butter in a saucepan over medium-high heat, simmering and stirring until it is foamy, has golden specks and smells nutty, about 4 to 5 minutes. Pour it into a heatproof bowl, including the specks, and cool to room temperature (about 45 minutes).
- Whisk the flour, cornflour, baking powder, baking soda and salt in a separate bowl.
- Add both sugars to the cooled browned butter and mix with a wooden spoon. Add the egg, yolk and vanilla and mix until smooth.
- Add the dry ingredients and mix until mostly combined, then add the chocolate chips and stir until fully incorporated.
- Portion 155 g of dough per cookie, roll into balls, then flatten into discs about 3.75 cm (1.5 in) thick. Place in an airtight container and refrigerate for 12 to 24 hours.
- Preheat oven to 180°C (350°F, 170°C fan-forced). Line a tray with baking paper.
- Place 4 cold dough discs 7.5 cm (3 in) apart on the tray and bake for 17 minutes, until edges are golden and the surface is just set but still pale.
- Working quickly, press extra chocolate chips onto the hot surface, then cool on the tray for 20 minutes before transferring to a rack.
