- In a bowl, combine the ground bean sauce, hoisin, tomato sauce, red fermented bean curd (mashed with the back of a spoon), black pepper, five spice, garlic salt, sugar and cooking wine. Mix well and adjust the taste.
- Mince the shallots and ginger, add them to the marinade and mix until smooth.
- Dry the drumsticks with paper towels and place them in a large bowl. Pierce the thickest part of each 2–3 times with a small knife.
- Pour half the marinade over the drumsticks and coat each piece well. Add a little more marinade, then pour the rest on top.
- Cover and marinate in the fridge for at least 1–2 hours, or up to overnight.
- Preheat the oven to 385°F with the rack in the middle. Line a baking pan with foil and set a baking rack on top.
- Arrange the drumsticks on the rack, spaced evenly. Bake for 30 minutes, then flip them and drizzle each with a little oil.
- Raise the oven to 390°F and bake 10–15 more minutes, until the internal temperature reaches 180°F.
- Brush the drumsticks all over with honey, flip them back to the original side, and bake another 3–5 minutes to crisp the skin and caramelize the honey.
- Plate and serve.
