Ingredients

Instructions

  1. Finely chop the green onion, carrot and onion as small as possible.
  2. In a large bowl, beat the eggs. Add the chopped vegetables, salt, sugar and white pepper (or black pepper), and mix well.
  3. Heat 1/2 tablespoon of oil in a nonstick pan over low heat, spreading it evenly and wiping off any excess with paper towels.
  4. Pour about 1/3 of the egg mixture into the hot pan, tilting to spread it. Cook about 30 seconds, until the bottom is set but the top is still slightly runny.
  5. Roll the egg up from one side using two spoons, then push it to the lower part of the pan.
  6. Lightly oil the pan, pour in another 1/3 of the egg mixture, spread it out and cook 30 seconds. Roll it up again over the first roll.
  7. Repeat with the remaining egg mixture, rolling it up each time.
  8. Sear the roll lightly on each side for 30 seconds, until light golden brown. Move it to a cutting board and rest 2 minutes.
  9. Cut into bite-sized pieces, arrange on a plate, and serve with ketchup on the side if you like.
