Ingredients

Instructions

  1. Put the ginger slices and scallion in a bowl, pour in warm water and stir gently to release the flavour. Let it infuse.
  2. Mix the ground chicken with a pinch of salt, a pinch of white pepper, soy sauce, oyster sauce, rice wine, cornstarch, the scallions and the infused water, stirring in one direction until the filling is smooth.
  3. Fill a piping bag with the filling, or spoon it into the centre of each wrapper. Pipe or place the filling in the centre of a wrapper, then pinch and seal the edges closed, with a little water if needed.
  4. Bring the chicken stock to a boil, season with salt, soy sauce, sesame oil and white pepper, and keep it simmering gently.
  5. Cook the wontons in the simmering broth until they float and the filling is cooked through, adding a cup of cold water during cooking if the water boils too hard.
  6. Add the bok choy halves to the broth and cook until tender, then serve the wontons and bok choy in the broth.
