The Easiest Doughnut You'll Ever Make

Ingredients

Instructions

  1. Steam the peeled sweet potato chunks for 10-15 minutes until fully cooked; a fork should slide into the largest piece with no resistance. Do not boil them.
  2. Transfer to a plate and mash until smooth. Let cool to room temperature.
  3. Put the cooled mash in a bowl, add the sugar and salt, and stir until the sugar dissolves. Taste and add more sugar if you want it sweeter.
  4. Add the tapioca starch and flour, sift in the baking powder, and stir until all the dry flour is absorbed.
  5. If the dough is too dry, add coconut milk 1 tablespoon at a time until the dry flour is worked in. If the dough is still very soft and sticky after that, add tapioca starch and flour in a roughly 2:1 ratio (about 2 teaspoons tapioca starch to 1 teaspoon flour) and work it in, repeating until the dough no longer sticks to your hands and holds its shape when rolled.
  6. Scoop heaped measuring teaspoons of dough and roll them into balls about 3/4 inch (2 cm) in diameter. Place on a plate. If not frying right away, cover and refrigerate for up to 2 days.
  7. Pour about 1 inch of oil into a medium pot, deep enough to fully submerge the balls.
  8. Heat the oil to 325°F (160°C). Add the balls and stir right away so they don't brown on the bottom. Keep stirring as they float and brown evenly. Fry for a full 5 minutes, even if golden, keeping the temperature around 325°F. If they are still not brown enough after 5 minutes, turn the heat up to high.
  9. Lift out with a wire skimmer, shake off excess oil, and drain on paper towels, rolling them gently between towels to absorb surface oil. Move to a rack to cool slightly.
  10. Brush or spray with oil and air fry at 375°F (190°C) for 8 minutes. Shake the basket, then air fry 2-3 more minutes, until well browned all over. Air fryer timing varies.
  11. To reheat cold doughnuts, air fry at 350°F for about 3 minutes, until crisp again.
