Ingredients

Instructions

  1. Wash the green onions and trim off the roots, removing any tough outer layers. Cut a small slit in any thick white parts. Set aside.
  2. In a small saucepan, dissolve the glutinous rice flour completely in the water. Simmer over medium-low heat for 3–4 minutes, stirring constantly, until thickened. Remove from heat and let cool completely.
  3. Blend the apple, onion, garlic cloves, ginger and the 1/4 cup water until smooth.
  4. In a large bowl, combine the blended mixture, gochugaru, sugar, honey, fish sauce and the cooled porridge. Mix well.
  5. Add the green onions and coat them thoroughly with the paste, starting with the white parts and then the green parts.
  6. Transfer to an airtight container, scraping in all the paste and pouring it over the top. Leave at room temperature for about 1 day, then refrigerate to ferment.
  7. Serve with hot rice or any meal.
