- Parsley · chopped1 tbsp
- Salt
- Black pepper
- Egg1
- Dijon mustard1 ½ tbsp

Instructions
- Cut the potatoes in half, or into bite-sized pieces if large. Put them in a pot of cold water with a pinch of salt, bring to a boil and cook until tender but not mushy.
- Drain the potatoes and spread them on a cookie sheet to cool, so they don't get soggy.
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the olive oil, garlic, thyme, rosemary, parsley, salt and pepper. Toss the cooled potatoes in the mixture.
- Spread the potatoes on a baking sheet and bake for 10 minutes, until fragrant.
- For the aioli, whisk the Dijon mustard, egg and garlic in a bowl, then add olive oil very slowly while whisking until smooth and mayonnaise-like.
- Stir in harissa if you want heat, then serve the warm potatoes with the aioli on the side.
