The Easiest Summer Dessert You'll Make All Season (No-Bake!)
Ingredients
- Cream cheese16 oz
- Heavy cream3 cups
- Sugar2 cups
- Vanilla · paste1 tbsp
- Graham cracker14.4 oz
- Mixed berries3 ½ cups
Instructions
- Beat the cream cheese in a large bowl with an electric mixer until smooth.
- On medium-low speed, slowly mix in the heavy cream until smooth and lump-free, scraping the bowl now and then.
- Raise the speed to medium-high and beat for about 1 minute, until the mixture starts to thicken and the beaters leave trails.
- Stir in the powdered sugar and vanilla, scraping the bowl as needed.
- Mix on low, then beat on high until stiff peaks form; the mixture should be thick, fluffy and like Cool Whip.
- Cover the bottom of a 13 x 9-inch (33x23 cm) pan with a layer of graham crackers, breaking them to fit.
- Spread about a third of the cream mixture over the crackers.
- Scatter 1½ cups (244 g) of berries over the cream layer.
- Add another layer of graham crackers, then another third of the cream mixture and 1½ cups (44 g) of berries.
- Top with a final layer of graham crackers and the remaining cream mixture.
- Crumble one graham cracker over the top if you like, then scatter the remaining ½ cup (82 g) of berries on top.
- Cover and refrigerate for at least 6 hours before serving. For cleaner slices, freeze for up to 30 minutes before cutting.
