The Easiest Sweet Potato Side Dish EVER! Thanksgiving Recipe | Chef Jean-Pierre
Ingredients
- Sweet potato2–3
- Butter4 tbsp
- Orange2 oz
- Orange juice6 oz
- Honey2 tbsp
- Balsamic vinegar¼ cups
- Vanilla1 tbsp
- Cornstarch2 tbsp
- Salt
- Black pepper
- Parmesan cheese½ cups
- Raisin¼ cups
Instructions
- Preheat the oven to 375°F.
- Poach the potato slices in boiling water until just tender but not mushy (about 95% cooked).
- In a saucepan, melt 2 tablespoons of butter and add the orange concentrate, orange juice, honey, white balsamic vinegar and vanilla. Bring to a boil, then simmer on very low heat until smooth.
- Season the glaze with salt and pepper. Thicken with the cornstarch mixture as needed so it clings to the potatoes.
- Put the poached potatoes in a buttered ovenproof baking dish. Sprinkle the raisins on top, pour the glaze over, add the Parmesan and bake for 10 minutes.
