The Famous Catalan FRIED FISH Sandwich | Bocata de Bacalao de Mataró
Ingredients
- Extra virgin olive oil3 tbsp
- Onion1
- Garlic6 cloves
- Tomato paste2 tbsp
- Paprika · smoked½ tsp
- Tomato sauce1 can
- Olive oil1 cup
- Cod3
- Flour¼ cups
- Cornstarch¼ cups
- Baguette1
- Salt
- Black pepper
- Sugar
- Parsley · chopped
Instructions
- Heat 3 tablespoons (45 ml) extra virgin olive oil in a large pan over medium heat. After a couple of minutes, add the chopped onion and garlic and stir for about 4 minutes until the onion is slightly translucent.
- Make a well in the middle, add the tomato paste and stir for 1 minute. Add the smoked paprika and stir until mixed. Add the tomato sauce, season with salt, pepper and a dash of sugar, stir, then reduce to low heat.
- While the sauce simmers, heat 1 cup (240 ml) olive oil in a medium pan over medium heat.
- Pat the cod fillets completely dry on paper towels, season both sides with salt and pepper, and cut each fillet into 4 even pieces.
- Whisk the flour and cornstarch in a bowl, coat each piece of fish well, and shake off the excess.
- When the oil is hot, fry the fish in two batches so the pan is not crowded, for 6 to 8 minutes until golden and crispy all over. Drain on a wire rack.
- Cut the baguette into 5-inch (13 cm) sandwiches, then slice each one in half without cutting all the way through.
- Spread the thick tomato sauce over the bottom and top of each sandwich, add 4 pieces of fried cod per sandwich, and garnish with chopped parsley. Serve at once.
