The Famous GARLIC POTATOES from San Sebastian Spain
Ingredients
- Extra virgin olive oil1 cup
- Potato4
- Garlic8 cloves
- Chili flake · crushed¼ tsp
- Parsley · chopped2 tbsp
- Paprika · smoked½ tsp
- Chive · chopped
- Salt
- Black pepper
Instructions
- Heat the olive oil in a large frying pan over low-medium heat.
- Meanwhile, cut the potatoes into bite-sized pieces about 3/4 inch (2 cm) thick.
- Add the potatoes to the hot pan and mix, then stir every 3 to 4 minutes so they cook evenly.
- After 25 to 30 minutes, when the potatoes are just cooked through (a toothpick should pierce them easily), remove the pan from the heat and drain the potatoes into a colander set over a heatproof bowl, keeping the oil.
- Return the same pan to low-medium heat and add 3 tbsp (45 ml) of the reserved oil. Immediately add the garlic and crushed red pepper, stirring constantly.
- After 1 minute, when the garlic smells fragrant, turn off the heat. Add the potatoes back to the pan with the parsley and season generously with salt and a little pepper. Mix gently until well combined.
- Transfer to a large serving dish, top with a dash of paprika and the chopped chives.
