The Famous MARINATED POTATOES from Granada Spain | Patatas Marinadas
Ingredients
- Potato2 ¼ lb
- Garlic8 cloves
- Bell pepper · roasted1
- Oregano · dried2 tsp
- Paprika · smoked1 tsp
- Cumin · ground1 tsp
- White wine vinegar1 tbsp
- White wine½ cups
- Extra virgin olive oil3 tbsp
- Salt
- Black pepper
- Parsley · chopped
Instructions
- Rinse the potatoes, place them in one layer in a stockpot, cover with just enough water, season generously with salt and bring to a high heat.
- Meanwhile, mash 4 garlic cloves in a mortar with the roasted red pepper, oregano, paprika and cumin, season with salt and pepper, then add the vinegar and white wine and mix. Set aside.
- After about 25 minutes, check that the potatoes are cooked through with a toothpick; if not, boil until tender. Transfer them to a bowl of iced water.
- When cool enough to handle, peel them, put them in a large bowl, pour the marinade over and leave for 10 minutes.
- Heat the same stockpot over medium heat and add the olive oil.
- After a couple of minutes, add the remaining 4 garlic cloves, roughly chopped, and stir constantly. After 1 minute, add the marinated potatoes, season with salt and pepper, shake the pot gently and simmer for 5 minutes, or until the marinade has reduced by half. Remove from heat.
- Transfer the potatoes and sauce to a serving dish and top with chopped parsley.
