The Freshest Pasta Sauce: Cherry Tomato Sauce
Ingredients
- Olive oil¼ cups
- Garlic5
- Chili flake · crushed0.13 tsp
- Cherry tomato4 cups
- Salt½ tsp
- Black pepper · cracked¼ tsp
- Sugar½ tsp
- Basil10
- Pasta8 oz
- Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium-low heat.
- Add the garlic cloves and crushed red pepper and cook, stirring now and then, for 3 to 5 minutes without letting the garlic brown.
- Carefully add the cherry tomatoes, salt, black pepper and sugar if using. Cook, stirring often, until the tomatoes start to burst.
- When most tomatoes have burst, remove and discard the garlic cloves, then gently mash the tomatoes (a potato masher or fork works).
- Stir in the torn basil and keep the sauce simmering while you cook the pasta according to package directions, reserving some pasta water.
- Add the warm pasta and about 2 tablespoons of the reserved pasta water to the sauce. Cook over medium-low heat until the sauce clings to the pasta. Serve warm, with parmesan if desired.
