- Oregano · dried1 tsp
- Vegetable broth3 ½ cups
- Penne8 oz
- Cream cheese4 oz
- Manchego cheese · finely grated½ cups
- Parsley · chopped¼ cups

Instructions
- Heat a large frying pan over medium heat and add the olive oil.

- After 3 to 4 minutes, when the onion is translucent, add the oregano and stir briefly.
- Add the vegetable broth, season with salt and pepper, raise to high heat and stir gently.
- Once boiling, add the pasta and stir every 2 minutes so it cooks evenly and does not stick.
- Meanwhile, put the room-temperature cream cheese in a bowl with the grated cheese and parsley, season lightly with salt and pepper, and mash and mix until well combined.
- After 9 to 10 minutes, when most of the broth is absorbed but some remains, cover the pan and simmer on low-medium heat for 2 to 4 minutes until the pasta is al dente.
