Ingredients

Instructions

  1. Mix the sauce ingredients in a bowl until smooth, then store in the fridge until serving.
  2. In a large bowl, mix the beef with garlic powder, onion powder and smoked paprika, season with salt and pepper, and mix lightly until just combined.
  3. Lay out all 10 tortillas on a clean surface.
  4. Divide the beef into 10 equal portions. Place one on each tortilla and spread it thinly and evenly with your hands or a spatula, right to the edges, leaving a small lip if needed.
  5. Heat a large non-stick or cast-iron pan over medium-high heat and spray with oil. Cook the tacos beef-side down for 2 to 3 minutes until the beef is browned and the edges are crispy.
  6. Flip each taco so the tortilla is in the pan, immediately top with one slice of light cheese, and cook for 1 minute until the cheese melts and the tortilla is golden and lightly toasted. Repeat with the rest.
  7. Top each taco with shredded lettuce, diced onion, diced pickles and the sauce, and serve immediately.
