Ingredients

Instructions

  1. Pat the tofu dry with paper towel, then break it into medium bite-sized pieces.
  2. Toss the tofu with the soy sauce, maple syrup and toasted sesame oil, then set aside to marinate for a few minutes.
  3. Prepare two plates: on the dry plate, put 1 cup flour; on the wet plate, put 1/2 cup flour and 3/4 cup water, then dissolve with a fork (add more flour or water as needed).
  4. Coat half the tofu in the dry flour, dip it in the wet mixture, then coat again in the dry flour. Set aside and repeat with the rest.
  5. Heat the avocado oil in a frying pan over medium heat for a few minutes, until a bamboo chopstick inserted in the oil produces fast-moving bubbles.
  6. Fry half the tofu for 4-6 minutes until golden brown, turn, fry the other side for 3-4 minutes, then move to a cooling rack. Repeat with the rest.
  7. Finely chop the garlic and ginger.
  8. Heat a sauté pan over medium heat, add the chili oil, garlic and ginger, and cook for a few minutes.
  9. Add the dried red chilies and sauté for a couple of minutes.
  10. Add the maple syrup, plant-based oyster sauce, soy sauce, dark soy sauce and black vinegar; stir and simmer for about a minute.
  11. Mix the potato starch with the water to make a slurry, then stir it into the sauce. If the sauce is too thick, stir in a little more water.
  12. Add the crispy tofu and toss to coat, then plate and garnish with white sesame seeds.
