Ingredients

Instructions

  1. Cut the chuck roast into large chunks, about 3 to 4 inches.
  2. Heat a drizzle of avocado oil in a large pot or deep sauté pan over medium-high heat. Season the beef generously with sea salt and brown it in batches on all sides, then set it aside in a bowl.
  3. In the same pan over medium heat, sauté the sliced onion for 5 to 7 minutes until soft. Add the sliced garlic and cook for 1 minute.
  4. Add the sea salt, black pepper to taste, chili powder, smoked paprika, coriander, cumin, sugar, dried garlic, dried onion and bay leaves. Stir and cook the spices for a few minutes.
  5. Pour in the water and return the beef to the pan. Bring to a simmer over high heat, then reduce to the lowest heat and cover.
  6. Cook over low heat for 2 hours, until the beef is very tender and falls apart when pulled with a fork. Keep warm.
  7. For the spread, combine the mayonnaise and horseradish in a small bowl, adjusting the horseradish to taste. Season with salt and black pepper, then stir in the dried garlic, smoked paprika, chives and parsley. Refrigerate until needed.
  8. Heat the oven broiler to high. Shred the beef finely with tongs and a fork.
  9. Split the rolls if needed and set them on a parchment-lined baking sheet. Spread the horseradish spread generously on both halves.
  10. Pile shredded beef generously on one half of each roll. Top with cheese cut into small squares or triangles, one or two slices per roll.
  11. Broil for 5 to 7 minutes, until the cheese has melted and the bread is toasted. Close the sliders and garnish with herbs if desired.
