The Most Flavourful Steak I've Ever Made | Chef Jean-Pierre
Ingredients
- Beef2
- Avocado Oil or Clarified Butter1 oz
- Onion4 oz
- Blue cheese4 oz
- Butter1
- Shallot · minced¼ cups
- Mushroom · sliced2 cups
- Salt
- Black pepper
- Balsamic vinegar2 tbsp
- Marsala¼ cups
- Beef stock¾ cups
- Cornstarch
- Thyme · chopped2 tsp
- Rosemary · chopped2 tsp
- Carrot · peeled1 lb
- Olive oil2 tbsp
- Potato1 lb
- Extra virgin olive oil2 tbsp
- Parsley · chopped1 tbsp
Instructions
- Salt both sides of the steaks and refrigerate them uncovered for at least 2 to 3 hours, or up to 24 to 48 hours.
- Heat the oil in a frying pan, add the steaks and sear until a good crust forms on one side (about 3 to 4 minutes). Flip them, top each with caramelized onion and cheese, and bake for about 5 minutes, depending on how you like them done.
- Heat the butter in a saucepan. When hot, add the shallots and cook until light golden brown, then add the mushrooms with salt on top and sauté until they have released all their liquid.
- Add the vinegar, wine, stock, cheese and fresh herbs, then adjust salt and pepper to taste.
- To thicken, stir in a little cornstarch diluted in water, or just enough cooked roux to reach a light consistency.
- Poach each carrot until cooked, then plunge into ice water to stop the cooking.
- Spread the carrots in a lasagna pan with olive oil, chopped parsley, salt and pepper, and bake them alongside the steak for 5 minutes to reheat.
- Poach the potatoes in water until 95% cooked.
- Heat olive oil in a sauté pan, add garlic, thyme and rosemary, then add the potatoes and sauté until golden brown. Sprinkle with parsley, adjust salt and pepper, and serve.
