The most popular Mexican table sauce.
Ingredients
- Tomatillo8
- Serrano pepper3
- Garlic1 clove + 1
- Onion¼
- Cilantroa handful
- Saltto taste
Instructions
- Preheat the oven to 450°F (232°C).
- Place the tomatillos, serrano peppers, onion and garlic clove on a baking sheet. Roast in the oven until softened and charred in spots.
- Peel the garlic. Peel off any overly blackened skin from the serranos or tomatillos; a little char adds smokiness.
- Remove the stems from the serranos, and the seeds too if you want a milder salsa.
- Put the roasted vegetables and the cilantro into a food processor with a sprinkle of salt. Pulse to the consistency you want, without over-blending.
- Taste and add salt as needed. Thin with water if it is too thick.
- Tomatillos are acidic, so the salsa may need more salt than a normal salsa.
