Ingredients

Instructions

  1. Preheat the oven to 425°F (220°C). Fit the unbaked 9-inch pie crust into a 9-inch pie plate, flute or crimp the edges, prick the bottom all over with a fork, and chill in the refrigerator.
  2. In a food processor, combine the flour, dark brown sugar, cinnamon, nutmeg and salt. Pulse briefly.
  3. Add the cold butter pieces and pulse until the mixture looks like coarse crumbs. Set aside.
  4. In a separate bowl, stir the hot water and baking soda until the soda dissolves. Add the molasses and whisk until fully combined.
  5. Add the egg yolk and vanilla (if using) to the molasses mixture and whisk to combine.
  6. Take the crust out of the refrigerator. Pour half the molasses mixture into the crust, sprinkle half the crumbs over it, pour the remaining molasses mixture on top, then finish with the rest of the crumbs.
  7. Place the pie on a baking tray and bake for 15 minutes.
  8. Reduce the oven to 350°F (175°C) and bake for another 22 to 28 minutes, until set. The center may still jiggle slightly but should spring back when touched.
  9. Let the pie cool completely before slicing.
