Ingredients
- Rice · cooked3 cups
- Vegetable oil2 tbsp
- Shrimp12
- Onion½
- Garlic2 cloves
- Egg2
- Soy sauce1 tbsp
- Fish sauce4 tbsp
- Sugar
- Scallion3 stalks
- Cucumber3 slices
- Cilantro1 sprig
- Lime2
- Chili pepper1
Instructions
- Dice the onion and mince the garlic. Chop the scallions, slice the cucumber and red chili, and cut the lime into wedges. Set everything aside.
- Use day-old jasmine rice. If using freshly cooked rice, spread it out to cool or refrigerate until firm before stir-frying.
- Stir-fry the onion for about 10 seconds until fragrant. Add the garlic and shrimp and stir-fry for about 30 seconds, just until the shrimp turn pink. Remove and set aside.
- In the same wok over high heat, add the remaining 1 tablespoon of cooking oil. Crack in the eggs and stir-fry until about halfway set.
- Add the rice and stir-fry, breaking up any clumps so the grains separate.
- Season with the soy sauce, fish sauce and a pinch of sugar, and stir to combine.
- Return the shrimp to the wok, stir-fry until evenly combined, then add the scallions and toss once more.
- For the chili fish sauce, combine the sliced red chili, fish sauce and a squeeze of lime juice in a small bowl and stir. Serve on the side with the fried rice, cucumber, cilantro and lime wedges.
