- Mushroom2 cups
- Garlic · chopped2 tbsp
- Celery1 ½ cups
- Marsala½ cups
- Bell pepper2 cups

Instructions
- In a medium-heat fry pan, warm about 1 tablespoon of olive oil, then brown the bacon for a couple of minutes.
- Add the pork shoulder, salt and pepper, and brown the meat well on all sides.
- In a Dutch oven, heat a couple of tablespoons of olive oil, then cook the onion until golden brown.
- Add the herbs and mushrooms, salt the mushrooms, and sauté for a few minutes.
- Add the garlic and, once fragrant, add the bell pepper, celery, wine, tomatoes, jalapeno and stock.
- Bring to a boil, then lower the heat to very low and simmer for about 1 to 1½ hours, until the meat is tender, stirring every 15 to 20 minutes so nothing sticks to the bottom.
- If the sauce is too thin, thicken it with cornstarch or a cooked roux; if using raw flour, cook it for at least another 15 to 20 minutes while stirring constantly.
- Adjust the seasoning and serve.
