Ingredients

Instructions

  1. Stir the 2 teaspoons of cinnamon into the ¾ cup of sugar in a shallow dish and set aside.
  2. In a large saucepan, bring the water, butter, 1 tablespoon sugar and salt to a boil over medium-high heat. Take it off the heat as soon as it boils.
  3. Add all the flour at once and stir hard for 30 to 60 seconds until no dry flour remains. Return to the heat and cook, stirring, for 30 seconds.
  4. Transfer the dough to a large mixing bowl or stand mixer bowl and beat on medium speed for 2 minutes to cool it slightly.
  5. With the mixer running, add 3 eggs one at a time, scraping down the bowl after each. Add the vanilla and beat until smooth and glossy. The dough should fall slowly and steadily from the beaters. If it clings, beat the remaining egg and add it little by little until the consistency is right; you may not need all of it.
  6. Spoon the dough into a large piping bag fitted with a large closed star tip.
  7. Heat 2 inches of oil in a large pot to 400°F over medium heat, using a thermometer. Line a large baking sheet with paper towels.
  8. Pipe 3–5 inch strips of dough into the hot oil, about three at a time. Fry 1 to 2 minutes per side, until golden brown.
  9. Lift out with tongs, drain on the paper towels for about 30 seconds, then toss in the cinnamon sugar and serve immediately.
