- Cream3 ¾ cups
- Vanilla1 ½ tsp
- Nutmeg · ground¼ tsp

- Pecan · chopped½ cups
- Cereal1 ½ cups
- Almond flour¾ cups
- White chocolate4 oz
Instructions
- Preheat the oven to 375°F (190°C).
- Melt the 4 oz of butter in a pan over medium heat. Add the sliced apples and sauté until they start to caramelize and turn slightly brown. Take off the heat and set aside.
- In a large bowl, combine the diced brioche, the dried fruits and the cooked apples, and mix well.
- Transfer to a greased 9 x 13 inch baking dish.
- Whisk together the eggs, cream, vanilla, nutmeg, cinnamon and sugar. Blend with an immersion blender for a couple of minutes.
- Pour the custard over the bread and apple mixture and mix well until the bread absorbs it.
- For the topping, heat the 4 oz of butter in a saucepan until light golden brown. In a separate bowl, combine the pecans, Grape Nuts, five-grain cereal, light brown sugar and almond flour. Pour the browned butter over and stir until crumbly.
- Sprinkle the topping evenly over the pudding and bake for 40 to 45 minutes, until the top is golden brown and the pudding is set.
- For the caramel, cook 1 cup of sugar with ½ cup of water over medium heat without stirring until it turns a deep mahogany color, about 10 minutes.
- Remove from the heat and carefully add the white chocolate and ¾ cup of cream (the text also says 1 cup) and the 2 tablespoons of butter, stirring until smooth. Drizzle over the slices.
