The PERFECT Grilled Lemongrass Pork
Ingredients
- Lemongrass · finely chopped1
- Chili pepper · chopped4
- Garlic · chopped8
- Shallot · finely chopped2
- Fish sauce¼ cups
- Sugar¼ cups
- Black pepper1 tsp
- Vegetable oil2 tbsp
- Pork2 pieces
- Scallion · chopped
Instructions
- Put the marinade ingredients in a glass jar, close the lid and shake to combine.
- Pour half the marinade into a baking dish, lay the pork loin in it, pour over the rest and turn to coat evenly. Cover and marinate overnight. A plastic bag also works.
- Heat a grill to medium. Scrape the marinade off the pork and grill it until it reaches 145°F inside and is nicely charred outside, about 10-12 minutes per side. Use a meat thermometer.
- Take the pork off the heat and rest it for 3 minutes.
- Meanwhile, pour the reserved marinade into a saucepan with 2 tablespoons of water. Bring to a rolling boil over high heat and boil for 1 minute, skimming off any scum.
- Slice the pork and pour the sauce over it. Garnish with chopped cilantro and green onion if you like.
