The Perfect, Melt In Your Mouth Scones
Ingredients
- Flour2 cups
- Sugar¼ cups
- Baking powder2 tsp
- Salt½ tsp
- Butter½ cups
- Heavy cream½ cups
- Vanilla¼ tsp
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine the flour, sugar, baking powder and salt in a food processor and pulse to mix.
- Cut the butter into tablespoon-sized pieces, scatter over the flour and pulse until no butter pieces are visible.
- Stir the cream and vanilla together, pour over the flour mixture and pulse until the dough begins to clump.
- Turn the dough onto a lightly floured surface. Fold it in half, flatten gently, turn 90 degrees and repeat this folding five times without overworking it.
- Shape the dough into a smooth disk about 1 inch thick and 6 inches across.
- Cut the disk into 8 wedges, pressing the knife straight down for each cut.
- Place the wedges about 2 inches apart on the baking sheet, brush lightly with cream and sprinkle with sugar.
- Bake at 375°F (190°C) for 14 to 16 minutes, until the edges just begin to turn golden brown. Let cool on the sheet before serving.
