Ingredients

Instructions

  1. Bring a pot of water to a boil for the pasta.
  2. Peel the 3 garlic cloves and cut the broccolini into bite-sized pieces.
  3. Blend the garlic, cashews, 1 1/2 cups water, 1/2 teaspoon salt, pepper, Dijon mustard and tahini on high until smooth.
  4. Cook the pasta according to the package, stirring occasionally. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.
  5. Heat a nonstick pan over medium heat. Dry-sauté the broccolini for 4 to 5 minutes. Add the tomatoes and a pinch of salt and sauté for another 4 to 5 minutes.
  6. Add 1/4 cup water and sauté for a couple of minutes more.
  7. Add the pasta, the reserved pasta water and the sauce. Stir and cook for 2 to 3 minutes; if the sauce gets too thick, add some water.
  8. Plate the pasta and top with fresh cracked pepper, a pinch of crushed pepper flakes, a splash of lemon juice and chopped parsley.
